Smash Burgers: What the Technique Actually Does

Pressing a ball of mince flat onto a hot surface produces a burger noticeably different from a formed patty, and the reason is chemistry rather than fashion.

The Maillard Reaction

Browning is not simply cooking. It is a set of reactions between amino acids and sugars that happens at high temperature and produces hundreds of new flavour compounds.

Maximising it means maximising contact between meat and hot metal. Pressing a loose ball flat, hard, onto a properly preheated surface creates a large area of direct contact and a thin patty that develops crust across its whole face.

A thick patty cooked gently develops far less of this, which is the entire difference in taste.

Why the Press Has to Be Heavy

The meat resists, and a light press produces a thick patty rather than a thin one. Weight and rigidity are what make the technique work.

Cast iron presses provide both, and a pre-seasoned one releases more readily than bare steel. Presses and griddle kits designed for this, of the kind at hulisen.net, exist because a spatula pressed by hand rarely produces enough force evenly.

Placing a square of baking parchment between the press and the meat prevents sticking entirely, and it is the standard approach in kitchens that do this constantly.

The Technique

  • A very hot surface, hotter than feels comfortable for ordinary frying
  • Loosely formed balls rather than compacted patties
  • Press hard, once, within the first thirty seconds
  • Do not press again after that, which squeezes out juice
  • Flip once, when the edges are visibly browned and lacy
  • Season after pressing rather than mixing salt into the mince

Timing Matters

The press must happen in the first thirty seconds, before the surface has set. After that the meat has begun to firm and pressing squeezes out juice rather than spreading the patty.

This is why the sequence is: preheat thoroughly, place, press immediately, then leave alone.

Do Not Compact the Mince

Working mince into a tight ball produces a dense, springy texture. Loose handling leaves the strands separate, which is what gives a good burger its tenderness.

Form the balls gently and briefly, and refrigerate them until the moment they go on the heat.

The Food Safety Part

This matters and is worth stating plainly. Minced beef is not the same as a whole cut: grinding distributes any surface bacteria throughout the meat, so it cannot be safely served rare in the way a steak can.

Guidance in most countries is to cook minced beef to an internal temperature of 71°C, or 160°F, throughout. A thin smashed patty reaches this very quickly, which is convenient rather than a compromise.

Use a thermometer rather than colour, which is unreliable. And keep raw mince separate from anything ready to eat, with separate boards and utensils.
